This avocado toast recipe – So yummy, so nutritious. Especially if you go a little outside the box by adding a few extra ingredients!

I really don’t know what it is about avocado toast – it’s just SO GOOD! I’m a fan of avocados anyway, but the combination of crunchy, warm toast, and those little extras to give it some POW, just make this one of the best snacks ever.

All of the recipes are (of course) 100% vegan!

3 Different Avocado Toast Recipes…

  1. The ‘Go-To’. Great for an everyday snack, this is a quick and easy avocado toast recipe. Add as much heat as you like with tabasco and chili flakes!
  2. The ‘Fresh Madness’. What fresh madness is this?? Well, I’ll tell you… this avocado toast is incredibly fresh tasting with the addition of one of my all-time favourite mini salads on top. Fresh tomatoes and basil mixed with the warm crunchy toast and creamy avocado… just yum.
  3. The ‘Feeling Fancy’. A little more involved (but honestly, not much), this avocado toast recipe is a recent creation of mine and the first bite was a revelation. The addition of chipotle, lime and the added crunch of the seeds is a bit of a game-changer for me.

Tips For Making The Perfect Avocado Toast Recipe

  1. Use good bread. My favourite is either white sourdough or a seeded bloomer. As long as it’s fresh and nice and chunky! Preferably with a lovely crunchy crust.
  2. Use ripe avocados. This might sound obvious, but avocados that are too firm don’t have the full creaminess and won’t mash well. It’s worth the wait.

Pro tip: If you have solid avocado rocks at home that are refusing to ripen then put them in a brown paper bag with a banana and leave out of the fridge. They’ll be ripe before you know it!

  1. Mash before adding to the toast. I destroyed many pieces of toast before I realised a pre-mash was the way to go. Mashing in a bowl also allows all of the flavours to be combined fully for maximum yum.

Keeping It Vegan

Nearly all of the ingredients in their recipe are completely vegan anyway but there are a couple of things to look out for:

  • Bread – Luckily, most bread is vegan anyway but it’s worth checking the labels for those sneaky additions. Some bread contains milk, eggs, or even butter. If you’re looking to find out more then there are whole articles on it that are worth a look.
  • Hot Sauce – I use Tabasco which is vegan friendly! If you’re substituting for a different hot sauce it’s worth a check on the ingredients list. Some use refined sugars which are processed using bone char… yep, as in charred bones. More on that here.

What’s The Deal With Avocados??

There’s a lot going on in that little green dinosaur egg looking thing.

Avocados are a superfood, containing a whopping 20 vitamins, minerals and fibre.

They are incredibly nutrient-dense, meaning that you don’t need to eat huge quantities to get the health benefits. 

It’s worth remembering that avocados are also high in monounsaturated fats (the healthy kinds), so while they are ultra nutritious they are also calorie-dense. Monounsaturated fats are considered the ‘good’ kind of fat – they can even help lower cholesterol!

Despite being high calorie, some people believe that avocados can be an effective part of a weight loss diet. This is due to the high fiber content, meaning that they keep you feeling full for a good while.

You will see that there’s only half of an avocado in each avocado toast recipe below, so you’re still getting a nutrient hit while not overdoing it on the calorie front. At around 150 calories per half a medium avocado, you can easily enjoy this meal daily and not worry about overdoing it.

Avocado Toast Recipe – 3 WAYS!!

Ingredients

Recipe 1 – The 'Go-To'

  • 1 slice Any type of bread
  • ½ Avocado
  • 1 wedge Lemon
  • 1 pinch Black pepper
  • Tobasco (add as much as your taste buds like)
  • 1 small pinch Chilli flakes (optional)

Recipe 2 – The 'Fresh Madness'

  • 1 slice Any type of bread
  • ½ Avocado
  • 1 Fresh tomato
  • Basil leaves
  • 1 wedge Fresh lemon
  • 1 pinch Sea salt

Recipe 3 – The 'Feeling Fancy'

  • 1 slice Any type of bread
  • ½ Avocado
  • ½ tsp Chipotle paste
  • Fresh lime
  • 1 pinch Sea salt
  • 1 tsp Pumpkin seeds
  • 1 pinch Poppy seeds

Instructions

  • For each recipe, you need to cut a lovely fresh slice of crunchy bread.
  • Next, cut your avocado in half and pop the skin off. Get your fingers between the skin and the fruit. If it's ripe enough it should come off easily.
  • Put the avocado in a bowl and mash with a fork.

Recipe 1 – The 'Go-To'

  • Simply add the lemon and salt to the avocado and mix well.

  • Toast the bread.
    Spread the avocado onto the toast and crack the pepper over the top.
    Splash on some Tabasco and you're done!

Recipe 2 – The 'Fresh Madness'

  • Chop the tomato, basil leaves, and a wedge of lemon.
    Add to a small bowl along with the lemon juice and salt, and mix well.

  • Toast the bread.
    Spread the avocado onto the toast, then layer on the tomato mix and enjoy!

Recipe 3 – The 'Feeling Fancy'

  • Add the Chipotle paste, fresh lime juice, and salt to the mashed avocado and mix well.

  • Toast the bread.
    Spread the avocado mix onto the toast and top with a sprinkle of pumpkin seeds and poppy seeds and dig in!

    This is brilliant! However, how do you keep the other half of avocado? It gets brown really fast and might not be edible the following day…

      Hi Linda, thank you for the review! To keep the avocado I just leave the half with the stone in the fridge and then when I go to use it, I just take the stone out and cut a very thin slice off the brown part. I never found that wrapping it or any other methods left it as fresh as I’d want so I ended up slicing a bit off anyway. It’s the least hassle way I’ve found. Hope this helps!
