What Kit do I Need to Make This Vegan Jackfruit Pulled ‘Pork’ Recipe?

Really nothing fancy, just a clean cloth to put the jackfruit in to squeeze out as much water as possible.

If you have a tofu press then that’s a bonus so you can get out those last few drops, but it isn’t essential.

Then you just need a decent sized mixing bowl, one large pan, a spoon for stirring, and you’re set!

So What’s in this Vegan Jackfruit Pulled ‘Pork’?

Jackfruit… a weird, fibrous, squishy, greyish fruit that you would be mistaken for thinking had gone a bit ‘funny’ when you open the tin. But, like many things in life, it’s what you do with it that counts.

Jackfruit is amazing at taking in flavors from other things, so it’s important to season it really well. There are a few spices that make up a Cajun-style seasoning that gives this jackfruit pulled pork recipe a bit of heat, and A LOT of flavor.

  • Tinned, shredded jackfruit – most shops sell this now, but if not then you can definitely get hold of it online.
  • The ‘cajun’ mix – salt, smoked paprika, onion powder, thyme, oregano, cayenne pepper, and black pepper.
  • Cornflour – For coating the jackfruit and to give it a little crispness when cooked.
  • Passata – To moisten up the jackfruit a bit and add to the rich flavor. If you don’t have any then use tinned tomatoes instead.

This recipe has added vegetables to make this a more complete and nutritious vegan meal. 

  • Onion and garlic – These are pretty essential and add a lot to the flavor.
  • Red bell pepper, courgette, sweetcorn – I love these veggies but if you’re not a fan of one of them then just leave it out! Other great veggies to try would be spinach, finely chopped broccoli, or chopped tomatoes.

How to Make the Recipe

There are a few steps to this vegan jackfruit pulled ‘pork’ recipe but you’ll be happy to know they’re all super easy!

  • Squeeze out the water – this is a really necessary step as the jackfruit from the tin is so wet! You’ll be surprised at just how much water comes out and how it compresses down (that’s why you need two whole tins!)
  • Make the ‘cajun’ mix and coat the jackfruit. The cornflour comes in at this stage too. It may seem like a lot of herbs and spices but trust me on this one, it tastes AMAZING!
  • Cooking the jackfruit comes next, this is where the ‘pulled’ part comes into the jackfruit pulled ‘pork’. It will likely do a bit of clumping as it cooks so you just pull it apart with a fork to keep the stringy texture. Doing this while it cooks helps it get that lovely texture with a little bit of crispness.
  • Cooking the veggies in the same pan that the jackfruit was cooked in means that they pick up any of the flavour left behind. A dash of balsamic vinegar deglazes the pan and adds a lovely deep flavour to the veggies too. 
  • Building your taco, wrap, or burger, or simply enjoying the vegan jackfruit pulled ‘pork with a side of rice. This is the best bit! I love mixing up the flavours so I put the jackfruit mix into a tortilla wrap with some salad leaves, avocado and a squeeze of lime… mmmmmmm.

The cooked spicy jackfruit and vegetable mix should last up to three days in a sealed container in the fridge.

It’s great for batch cooking because it can be used for different meals, like in a burger, taco, or wrap, and enjoyed again for a healthy vegan dinner or lunch. 

If you want to mix it up a bit then adding things like salad leaves, spring onions, tomatoes, or cucumber. Black beans work really well with these flavors too, so does a large blob of hummus!

  • 2 tins Shredded jackfruit
  • 1 tsp Sea salt
  • 1 tsp Smoked paprika
  • ½ tsp Onion powder
  • ½ tsp Thyme
  • ½ tsp Oregano
  • ¼ tsp Cayenne pepper
  • ¼ tsp Black pepper
  • 2 tbsp Cornflour
  • 2 tbsp Passata
  • 1 tbsp Balsamic vinegar
  • ½ Red onion
  • 5 cloves Fresh garlic
  • 1 Red bell pepper
  • ½ Courgette
  • ½ cup Frozen sweetcorn

Optional Extras

  • Tortilla wraps
  • Hummus
  • Avocado
  • Coriander / Cilantro
  • Salad leaves
  • Salad onions


  • Drain and rinse the jackfruit.
    Place it all in a clean cloth or tea towel and squeeze out as much liquid as you can. If you have a tofu press, you can use this to press the last of the liquid out as you prep the rest of the ingredients.

  • Mix all of the spices together; sea salt, garlic powder, smoked paprika, onion powder, thyme, oregano, cayenne pepper, and black pepper.
    Put the jackfruit into a large bowl and add in the cornflour, mixing in well.
    Add the spice mix into the jackfruit next, stirring well to coat completely.

  • Cook the jackfruit in a pan on medium / high heat. No oil is needed if you have a non-stick pan.
    Stir occasionally, and if it clumps together you can pull it apart with a fork.
    After about ten minutes, it should be done.
    Set this aside in a bowl so you can use the pan for the vegetables.

  • While the jackfruit is cooking, chop all of the vegetables:
    Dice the red onion, crush, or finely chop the garlic, and cut the bell pepper into thin batons. You can use a peeler on the courgette to make ribbons, or cut this into batons too.
    Put the balsamic vinegar into the pan and immediately add in the vegetables.
    Cook the vegetables on high heat in the pan that you used for the jackfruit, for about five minutes.
    When done, add in the passata and stir in well.
    Finally, add the cooked jackfruit back into the pan and stir everything together so it is all well combined.

  • You can enjoy this jackfruit mix with rice, in a taco or burger, or my favorite – in a burrito.
    It tastes amazing when added to a tortilla wrap, along with hummus, salad leaves, avocado, and some fresh coriander/cilantro.
